REST & BE THANKFUL - Rum SM#2 Jamaica 2015

THE PROCESS

This new limited edition of Rest & Be Thankful (Fox Fitzgerald Brands) comes from the assembly of 10 barrels of Jamaican rum. Distilled in 2015 in Lluidas Vale (Jamaica), this rum is the result of rapid fermentation (approximately 30 hours) in American oak barrels, followed by distillation in a Forsyth-type pot still. The distillate was then aged on location in Jamaica in first fill bourbon casks for 4 years before being moved to Scotland for a further 3 years. The result: a very nice "light" style molasses rum that is both delicate and complex with Jamaican characteristics.
