THE PROCESS

This Single Malt Single Cask Irish Whiskey from Clonakilty has been aged in Sherry barrels. The total yield from this barrel was 780 bottles, as sherry barrels are generally somewhat larger than ex-bourbon barrels. The result of this maturation is a rich, complex whisky.

Fun fact: the Master-Distiller Oishin initially had an 18-year-old barrel in mind, but liked this 15-year-old so much that he couldn't resist bottling it.

TASTE PROFILE

Notes of stewed red fruit, which are complimented by notes of caramel and nougat. The finish reveals notes of chocolate, dried apricot and vanilla.

Neat.
