THE PROCESS

The year 2001 marked the beginning of the new millennium by starting on a Monday, like the beginning of a new era. In our vineyards, the new millennium produced an excellent first vintage. The winter was cold and rainy and the summer was warm, with cold temperatures at night. These climatic conditions allowed the grapes to ripen perfectly, develop rich, complex aromas and retain their acidity.
