DAFTMILL - Lowland Single Malt 2011 Summer release

THE PROCESS

This is another perfect Daftmilll and epitomizes why we love this complex little lowlander in simple bourbon casks. This stunning single malt whiskey made from Publican Barley harvested by John and Sandy on August 28 and 29, 2009 in the 43c fields. It was then dried and stored at Daftmill to be malted at Alloa in the summer of 2010. After fermentation and distillation, the whiskey spent 12 years in 27 first-fill ex-bourbon barrels from Clermont Springs distillery in Kentucky. These remained in the barrel until 2023 after which 6550 bottles were filled at an alcohol content of 46% ABV.

TASTE PROFILE

On the nose the spirit has full notes of stone fruit, bay leaf and barrels, on the palate your palate is caressed with pleasant beeswax, fruity notes of the distillate, some caramelized brown sugar, cocktail bitters, praline and banana. The finish features wood spices with waves of cinnamon, nutmeg and dried ginger.
