Noble Coyote is known for using different varieties of agave for their mezcal. In this mezcal, the agave variety Espadín was used. The agaves were nurtured for 7 years until they were harvested. Pressing the agave was done with a stone mill and smoking the mezcal took place in a Floor Oven. The fermentation process was carefully carried out in Sabino barrels after which it was distilled in an Alambic.
All these processes were carried out by Marcos & Eleazar Brena, who used their knowledge, skill and expertise to create a particularly beautiful Mezcal.

The Espadín Agave is most commonly used because of its rapid growth, but the environment in San Amatlán gives this Noble Coyote Mezcal special characteristics.
On the nose grassy and vanilla. On the palate campfire smoke, dark spices and vanilla. The finish is long and smooth.
