Noble Coyote is known for using different varieties of agave for their mezcal. In this mezcal, the agave species Tobalá has been used. The use of this agave species is quite special because until 15 years ago, this species could only be found in the wild. This created the threat that the agave species could become extinct. The people behind Noble Coyote have therefore put a lot of time and effort in to manage to domesticate the species, making a very special mezcal. The agaves were grown for 12 years until they were harvested. The smoking of the mezcal took place in a Floor Oven. The fermentation process was carefully carried out in Sabino barrels after which it was distilled in an Alambic.
All these processes were carried out by Marcos & Eleazar Brena who, with their knowledge, skill and expertise, created a particularly beautiful Mezcal.
A note from the Maestro Mezcalero:
During the making of this batch it was colder than usual, this has caused the fermentation to be even longer than usual. The result is a mezcal with even more complexity.
On the nose vanilla and campfire smoke. On the palate bacon, campfire smoke, orange and pepper. The finish is long and smooth.
Neat or in a cocktail:
45ml Noble Coyote Mezcal - Tobalá
22.5ml Rhubarb liqueur
22.5ml Lime juice
15ml Sugar syrup
Shake
Top off with soda water
