THE PROCESS

This rum is distilled at the famous Monymusk Distillery (also called Clarendon Estate) in Jamaica. It carries the AHJ quality mark (common clean), which means, among other things, distillation in a pot still and a target level of esters at the still between 60 and 90 grams per hectolitre of pure alcohol. This rum was aged for over 24 years in an American oak cask, initially in a tropical climate before being transported to Scotland for the second part of maturation. Bottled in Scotland in February 2023 in 161 copies. dye free and cask strength.
